Caitlin is a Registered Dietitian Nutritionist and the Clinical Director at Simplicity Nutrition. She is passionate about connecting the dots between our physical body and emotional relationship to food. Regardless of your health journey, and what brought you here today, Caitlin helps you maneuver the sometimes complicated path toward healing, using functional nutrition practices and food as a compass. Caitlin will help you to identify root causes of dysbiosis and inflammation in the body, and provide a sustainable approach to help you overcome chronic conditions and live a more balanced life. As Clinical Director, she loves connecting with other providers to ensure that the clients at Simplicity Nutrition receive personalized and compassionate care. 

Caitlin began her journey toward becoming a dietitian 9 years ago when her life was turned upside down as a result of being diagnosed with an autoimmune condition, type 1 diabetes. After a few disappointing experiences with dietitians who used a very “one size fits all” cookie cutter approach, she realized there has to be something more! Fast forward to 9 years later and Caitlin is compassionately using her training and life experience to create a dynamic, in depth, personalized nutrition plan just for you! Because of her background, Caitlin especially enjoys working with newly diagnosed patients with Type 1 Diabetes, as well as those who are simply looking for more support to fine tune their blood sugar regulation. 

Caitlin has a Master of Science in Nutrition, with a specialization in community nutrition. Before becoming a dietitian, she spent most of her professional life working in a therapeutic foods setting, including being a therapeutic chef. With this background, combined with her training in Functional Nutrition and her own experience of living with a chronic condition, she is able to see the bigger picture in your health journey. Together, you will go beyond the surface! With you, she will explore how stress levels, sleep hygiene, energy levels, digestive health, intuitive eating and relationship to food and body, food culture and behaviors impact your condition.

Caitlin specializes in diabetes health and blood sugar management (type 1 and type 2), cholesterol and heart health, kidney health, nutrition for the elderly, general inflammation, intuitive eating, digestive health (including IBD, IBS, SIBO and other conditions of gut dysbiosis), food sensitivities, pediatric nutrition, nutrition through pregnancy, and general health and wellness. Caitlin approaches all of her clients with an “all foods fit” and “health at every size approach.” Caitlin is passionate about helping you find a sustainable lifestyle shift to feel your best, no matter what your nutrition concerns are.

Outside of work, Caitlin enjoys traveling, spending time with her animals, reading, hiking, socializing, dancing, cooking, trying new foods, and painting.

The world of dieting and eating healthy was a new and foreign concept to me. After researching multiple different nutritionists and dietitians in the Seattle area, I stumbled upon Simplicity Nutrition. It was easy enough setting up an appointment with Caitlin through Erin over the phone. Upon meeting Caitlin, all my fears and worries about starting a new diet fell to the side. Caitlin has been an amazing factor in my life style change of eating healthier. My Practitioner asked me if I was open to taking Metformin due to my A1c being elevated. I told her that was not an option. I started seeing Caitlin Immediately after that conversation (Jan 5th 2019). I have had a lot of friends who have had great success on the keto diet, so I wanted to try it but found it to be a little confusing on my own.  After reading reviews, I decided to give Caitlin a try at Simplicity Nutrition and am so glad I did! What I was most impressed with was how thorough she was.  Not only did she ask a ton of questions before we started, but also incorporated my latest blood work, did a complete body composition analysis and had me use an app to track what I was currently eating. After she had all that information, she personalized a program for me and set up the app with customized recommendations.  I left her very appealing and relaxing office with great information which she printed out for me including a customized eating schedule along with great food tips and suggestions. I truly felt like I received a very personalized nutrition plan, and one that I will follow for a long time. Caitlin has been such a pleasure to work with! I feel listened to, understood, appreciated, validated, and a priority every time I step into her office. Working with Caitlin has been amazing; not only is she teaching me how to make healthy foods and healthier choices, she’s made me more confident and comfortable in my cooking abilities.  I’m also learning more universal skills, like ways to work with different ingredients, what to do if a recipe goes wrong and, the most difficult for me, flavor profiles.
